The Besan Gatta is a popular Rajasthani dish which is a hit favourite amongst Marawaris and Vegatarians alike.

Also popularly known as Gatte ki subzi, these are basically small cylinder shaped dumplings made from gram flour and dry spices; steamed and cooked in a spicy and tangy yoghurt gravy served with either ghee laden chappatis or steamed rice.

Rajasthani cuisine, like it’s culture, is colourful and vibrant in its flavour. The genre of recipes circled around the function of food lasting for several days without having to heat it. Desert arid conditions along with scarcity of water and fresh green vegetables along with a long history of war like lifestyle is what influences this genre of cooking.
